Orchard

Until now, De Mederie's apples have been harvested primarily by hand from standard trees in the region, supplemented with carefully selected purchased apples. At the same time, they are working on developing their own 1.8-hectare orchard, in collaboration with their parents. Both standard and dwarfing trees are being planted, with a focus on organic cultivation. The range includes apple varieties, cider apples, pears, and quince, with a mix of English, French, and Belgian varieties.

Founders

Jorre became passionate about beer at eighteen and started his craft brewing career. In the years that followed, he worked exclusively in small breweries at home and abroad, gaining experience with a variety of styles and production methods. From this background, his interest in lesser-known fermented beverages like mead and cider grew. Since 2024, he has worked full-time for De Mederie, where beer, mead, and cider are produced on a small scale and in an artisanal way.

Cidery

Production at De Mederie is small-scale and hands-on. The fruit is usually pressed in-house using a bellows press and mixer, depending on volume and harvest. In some cases, there is additional collaboration with the Le Rouge press. In addition to its own production, cider is occasionally made for other cidermakers as a form of collaboration and knowledge sharing. This ensures efficient utilization of available production capacity and maintains the focus on craftsmanship, flexibility, and mutual support within the cider industry.

Ciders

With nearly seventeen years of experience as a craft beer brewer, Jorre approaches cider with a broad understanding of fermentation. This experience translates into a diverse range of ciders: spontaneously fermented ciders, the traditional method, ciders with macerated berries, oak-aged ciders, and experiments with various fruit varieties. Inspiration comes from brewing a variety of beer styles, where technique and creativity converge. Since the beginning, cider has also been offered on tap, as a fully-fledged alternative to beer.
